    Mmmmm...jerk chicken...

    I think I have a stainless steel gastric lining. My folks are all proper Southerners and I am first generation Californian, so I likely inherited my craving for ferocious pickled peppers. I won a Cinco de Mayo jalapeno-eating competition when I was going to San Francisco State.

    Jamaican cuisine likes Scotch Bonnet peppers, which are kin to habaneros and feasibly hotter. Jerk chicken is killer. Wish I had some about now!

    • 1 cup hot pepper sauce (Louisiana, Red Rooster, Trappey's, any generic store brand)
    • 1/2 cup cold salted butter
    • 1 tablespoon Worcestershire sauce
    • 1/2 cup honey
    • 2 teaspoons Tabasco sauce
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon ghost pepper, Carolina Reaper, Trinidad Scorpion Butch T sauce (very optional)
    Combine all ingredients in a double boiler. Heat and stir on low heat till the butter and honey are dissolved. Drown prefried chicken in sauce.

    If you have a deep fryer, dip the wings in the fryer for 15 seconds to set and caramelize the sauce.

    I cooked a cowboy size bone in ribeye last night. I needed a steak that big like I needed another hole in my head but it looked so good when he was cutting it. Just had to have it.

    Turned out rather well.

    End result.They had.to go in the foil then took them out of the foil and put them back on the smoke and then back in the foil.

    Not exactly a grill thing but just something I tried the other night and it is now like my new crack rock.

    Cut up some red hot links into bite size pieces, a little oil in the frying pan and just about when they are done add some maple syrup.

    Let them cool a little in the syrup and they are ready.

    Understanding it falls somewhere between a diabetic coma and congestive heart failure, they were absolutely kick ass.

  17. I gotta say the food you folks cook in your country,,is awesome!!!!.....@The Keep Book...I'm amazed with the man v food shows.and diners,drive ins and dives.......and @bamaman the chickens making me mouth water....arrrr.I'm starving reading this thread lol.

    Truth of it Soze is slaves were given poorest cuts of meat so they had to find a way to make it tender and taste good.This is where BBQ comes from ,came from slaves.Slow roasted over wood coals at low temps around 225 degrees.BBQ is not to be mistaken for Grilling .2 totally different methods but both are delicious.

    I should also mention that both black and whites were poor so they both ate the same foods here in the South .I mean people call it Soul Food but every white person I know grew up eating soul food here in the South.Wasnt many rich folks around back then white or black.
