BBQ.Tips.Technics. ect. thread.

    I have a sickness,well i have many. Dogs, football,ketchup in a bottle, and BBQ. I love to grill, rain,snow,sleet, dont care. I live for KC style Q. Give me that sweet heat.mmmmm.

    So lets hear some imput on what region you prefer,rubs,wood,sauce,tips tricks and down right lies.

    BBQ chicken quarters-
    meat + fire. let your coals burn down to white ash.

    first sauce
    1 part cooking oil - this will help the chicken cook evenly.
    3 parts apple cider vinegar - this will keep it moist and tender.

    in a med. size sauce pan mix the vinegar and oil and heat until the endges simmer and the oil mixes. add abit of black pepper.

    use this first sauce liberal fashion both sides(two batches is better imo) till chicken is about 15-20 minutes from being done.

    2nd sauce - BBQ, whatever you like. i prefer arthur bryants & gates aswell as the ol time recipe handed down from my grandpa.
    apply this in a liberal manner both side till caked on.

    let stand 15 minutes then enjoy.

    Down in TX, we hit up a taqueria/carniceria (meat market) grab some fajita marinada (marinated fajitas/skirt steak) tortillas, avocado, and onion... and grab some red mesquite wood frm wher ever...

    Fire the pit up , and do the fooly wayne...

    I like the taste of mesquite better for pork than beef. I know, i know, Texas is cattle country and beef is king.

    whats a skirt steak? like a flat iron steak?

    whats fooly wayne?
    is that like honky tonk heros by Ol' Waylon?(another sickness,reddirt music)

    skirt steak is the the same as fajitas. extremely flavorful and streamed wih fat. I hink frm the plate belly area. hence "skirt:"
    and fooly wayne is TX talk for , kinda like " do the damn thang"

    how about some bit beef. its just a beef roast that is cooked over an open fire , not in a smoker. like if you were cooking steak. its very common in my area.
