    i only have a weber kettle but i just poked a few holes in each potatoe and smoked them with apple wood chips over indirect heat. other woods may add better flavor but i used apple wood chips.

    i would also add a water pan so you dont lose moisture i use atleast one wit everythng.

    smoked a pork butt injected with some peach juice and chopped up peaches in the sauce, dank as shit if i may say. give it a try if you like peaches and bbq, a little worcestershire sauce and salt mixed with natural juices from a can of peaches for the injection, then cut up the peaches and add to your sauce. think i might smoke a beef brisket this weekend.

    Ill give you a horseraddish sauce you may like...its only to be used as a dipping sauce .Dont heat it up..2 to 3 tables spoons of horseraddish sauce..5 to 6 tablespoons of good Mayonaise ,I prefer Hellmans..Whisk it with a fork and then add some Apple Juice or Peach juice you can get creative with the juice for instance I used grape kool aid last weekend...But anyway add the juice just to unthicken and get it to the consistancy you like..I add a little mustard to and whisk some more..If the juice doesnt cut the horseraddish enough add some sugar untill you get it cut enough for your taste..I dip chicken ,ribs,steaks,pork i havent found anything its not good on....I even have one that likes this stuff on a salad lol.Try it u may like it.

    I also make my bbq sauce home made but I dont give those recipe,s out lol..I make different flavors.I make apple,peach,watermelon,grape,strawberry etc..I also have a original or plain...Mine has the sour in it also ,so its a sweet and sour bbq sauce.And these can be heated.

    thanks for the sauce recipe man il give it a shot. lol i havent gotten that creative yet im still workin on perfecting my first bbq sauce. i just used some corkys sauce and added peaches. you have given me some ideas now though lol.

    yw...and watch when you add your juice to that recipe..Too much and it just runs off your meet ..So you want the consistancy a little runny but you want it to coat the meat really good when u dip it into the sauce...but if you get it too runny just add more mayo and horseradish and just make a bigger batch.

    Candied bacon out the smoker ain't too bad. I brine my pork shoulder over night before putting it in the smoker helps it stay juicy, adds flavor, and that skin gets real crispy.

    Anyone do their own Carolina sauce? Found a recipe online that did pretty well but I'm always open to try something new.

    I font know much about acrolina sauces.Most people will try and stick with what they was raised on and tweek it a little or leave it alone..I tweek mine.When your making a sauce you have to decide on the foundation or the base..Like for instance I gave a sauce recipe on this thread and the base for the sauce was horseraddish.Now thats a dipping sauce it simple and easy..Now my bbq sauces have a different base being tomatoe.But thats the thing you have to figure out what is going to be the base or the foundation if the sauce lets see...vinegar?tomatoe?horseraddish?etc...One you get your base right you can then add to it and tweek it how you like it..Easier said than done lol..Basically i was raised on a sweet and sour bbq sauce based of tomatoe.90 percent of the store bbq sauces are tomatoe based.

    growing up in memphis got me hooked on tomato based sauce when it was used, mainly for pulled pork. Dry rubs are good but i always love me some good sauce also. after living in the carolinas for 10 yrs i like a good east or west carolina style sauce almost at much.
