    Lol BBQ is just as dam addictive as dogs.I got to have my fix least once a week and I'm not close to any top name joints which is why I try and do it myself.Got some decent local joints .

    This is Sugar Maple I'm using in my UDS .Very clean and no bark and not native to my area.So I had it shipped to me .ain't only takes a small amount in a UDS .very very clean .

    Decided to make some gumbo today. Used zucchini noodles in place of rice low carb life.

    That is American I'm pretty sure and a popular dish on the Gulf Coast where I'm from.Its prob more like a stew.

    It's French I believe but the Cajuns made it popular here whom originally are French Canadian. Mostly popular in the southern states, Louisiana bayou area. I see a lot of posts on FB from my southern friends who always making it and that shit looks delicious. Nothing around here like that.

    It's very popular all along the Gulf Coast area.My grandad cooked it and would have a crowd show up every time they heard he was cooking Gumbo.

    It's history like Brunswick type stews, and other combinations is based what was available.

    Once upon a time a long time ago there was a lady who did not have enough pork or chicken or beef to feed the whole family. Not enough potatoes and corn or butterbeans to make a meal. She put it all in a pot and together it made something brand new.

    Thank god for that insight. I would have missed out the Gumbos of the world, the stews, the low country boils, etc. etc.

    We did not do a lot of boils around here growing up. My first was when I was stationed in Charleston. Growing up I would have bet all the money in the world a sausage could not be boiled and be worth two squirts of piss. Then I was enlightened.

    Now I could eat a 2 gallon bucket of sausage from a boil. LOL

    But for today, I fired up the smoker early this morning and put three racks fo baby back on.

    Every one have a great and safe Saturday.

    Agk gumbo is really easy to make. Chicken shrimp and sausage for meat. Bell peppers yellow onions mix butter and flour add cajun spices then crock it. I add parmesan cheese and heavy cream to it.

    Sounds good.

    Just finished off the ribs from the smoker. As usual I made a pig of myself (no pun intended).

    I just watched some brazillian cat cook some meats in the ground.

    I always heard hank say "Beer on ice and and pig in the ground" but I never tried it.

    Next weekend I am going to give it a whirl.
