  2. All this food looks amazing!!...its making my mouth water,.....lol.a lot better the egg and chips,or beans on toast.which is the staple were I am lol..............keep these recipes coming all you American folks!............

    FRIED GREEN TOMATOES

    Ingredients

    • 3 tbsp. cider vinegar
    • 2 tbsp. olive oil
    • 1/4 c. finely chopped roasted red peppers
    • 2 tbsp. capers, chopped
    • 1/2 c. all-purpose flour
    • 2 large eggs, beaten
    • 1 1/3 c. panko (Japanese bread crumbs)
    • 1 1/2 c. canola or vegetable oil
    • 3 medium green tomatoes, cored, ends trimmed and discarded, cut into 1/4"-thick slices
    • 1 oz. crumbled blue cheese
    • 4 c. loosely packed baby kale and microgreens
    Directions
    1. Whisk vinegar, olive oil and 1/4 teaspoon each salt and black pepper; stir in red peppers and capers. Arrange wire rack over large sheet foil or parchment.
    2. Place flour in 1 large shallow bowl; place eggs in another. Place panko and 1/2 teaspoon salt in third bowl. Sprinkle tomato slices with 1/4 teaspoon salt.
    3. In heavy 12-inch skillet, heat canola oil on medium-high until hot but not smoking.
    4. Meanwhile, dredge 5 tomato slices in flour, then egg, letting excess drip off. Dredge in panko, patting so crumbs adhere. Carefully add breaded tomatoes to hot oil. Reduce heat to medium. Fry 3 to 4 minutes or until deep golden brown on both sides, turning over once. With slotted spoon, transfer tomatoes to wire rack to drain. Sprinkle with 1/4 teaspoon salt. Repeat breading, frying and draining with remaining tomato slices and breading.
    5. Toss greens with 2 tablespoons vinaigrette. Place tomatoes on serving platter; top with cheese. Serve tomatoes immediately with greens and remaining vinaigrette.

    Southern Crab Cake Sandwich

    Makes 4 servings

    Ingredients
    2 tablespoons sour cream, about
    1 egg, lightly beaten
    1 cup soft bread crumbs
    2 tablespoons fresh lemon juice
    Salt and freshly ground black pepper, to taste
    1 pound lump crabmeat, picked over for shells and cartilage\
    2 tablespoons butter
    1 tablespoon vegetable oil
    4 hamburger buns, toasted
    Tartar sauce (recipe follows)

    Directions
    1. Combine the sour cream, egg bread crumbs and lemon juice in a bowl. Season with salt and pepper. Add the crabmeat and toss to mix. If the mixture is a bit dry, add a little more sour cream. Form the mixture into 4-inch patties and refrigerate for at least 1 hour.
    2. Heat the butter and olive oil in a skillet over medium-high heat. Add the crab cakes and cook until golden brown, about 4 minutes on each side. Drain on paper towels. Spread the buns with tartar sauce and serve warm.
    Tartar Sauce

    Makes about 1-1/4 cups
    Ingredients
    1 cup mayonnaise
    1 teaspoon chopped garlic
    1 tablespoon chopped fresh parsley leaves
    1 tablespoon chopped green onions
    1 tablespoon Creole mustard
    1/4 teaspoon hot sauce
    Salt and freshly ground black pepper to taste

    Directions
    1. Combine all the ingredients in a mixing bowl and blend well. Refrigerate for at least 1 hour before using.
    If you're feeling a little creative, you can plop a poached or fried egg on top of the crab cakes - great brunch item. Or add slices of ripe tomatoes, a couple of strips of crisp bacon and a leaf or two of butter lettuce to the sandwich!

    [​IMG] Sweet Potato Bacon Fries

    Ingredients

    4 medium sweet potatoes, cut into matchsticks about the width of your pinky finger
    8 oz bacon (do not use think cut)

    Directions
    Preheat oven to 425F. Prepare a cookie sheet with Silpat or parchment paper.
    Slice each piece of bacon in half, lengthwise and then in thirds, widthwise, so there will be 6 strips cut from 1 piece of bacon. Wrap a strip of bacon around a matchstick sweet potato. Place on baking sheet. Repeat until all the bacon is gone. If you have left over sweet potatoes, feel free to put them on the cookie sheet as well, as they will bake nicely in all the rendered bacon fat.
    Bake for 25 minutes until the sweet potatoes feel soft. Turn the oven to broil and let the tops get crispy, 2 minutes or so but careful to watch as they will burn easily.
    Serve immediately.

    STUFFED ARTICHOKES

    [​IMG] 8 - Medium sized artichokes
    1 Lb - Plain bread crumbs
    1/4 Lb - Grated Grana Padano or Parmigiano Cheese
    2 Cloves finely chopped garlic
    Fresh parsley
    EV olive oil
    Salt & pepper

    Directions

    Clean the artichokes by removing the harder outer leaves and cutting the stem and the top part of the leaves as they may have thorns.
    Wash and drain the artichokes well.

    In a saute` pan put the bread crumbs and the garlic. Saute` until the bread crumbs are lightly golden. Let cool off.

    Add to the bread crumbs the finely chopped parsley, salt & pepper as desired, a bit more finely chopped garlic, the grated cheese and some olive oil.

    Mix the ingredients very well until the oil is evenly absorbed.

    Take each artichoke, open the leaves as much as you can and insert among the leaves the bread crumb mixture. Place the artichokes in an oven pan and add 1 1/2 inches of water. Place the pan on the stove and cook for 15 mins.
    Finish off by putting the pan in the oven for 15 more mins. at 400 F.

    [​IMG] ROASTED SWEET POTATOES

    Ingredients:

    3 Sweet potatoes, peeled and cut into bite size cubes...
    2 tsp olive oil
    1 tbsp butter
    1 tbsp of brown sugar (more if you want it sweeter)
    1 tsp of ground cinnamon
    1/4 tsp of ground nutmeg
    Pinch of ground ginger
    Sea salt, to taste

    Directions:

    Preheat the oven to 350 degrees. Coat a small baking dish with cooking spray. Peel and dice the sweet potatoes into bite size cubes and place in the baking dish. Melt butter in the microwave and pour over the potatoes along with the olive oil, brown sugar, cinnamon, nutmeg, ginger and salt. Add more sugar or cinnamon if desired. Toss to coat evenly.

    Bake in the oven for 60 minutes. Stir the sweet potatoes once or twice during roasting. Enjoy.

    Grilled Fish Tacos with Chili-Lime Slaw
    Makes 6
    Prep time: 15 mins
    Cook time: 10 mins
    Ingredients
    • 2 cups coleslaw
    • 3 tablespoons plain Greek yogurt
    • 2 teaspoons garlic chili sauce
    • 1/2 tablespoon lime juice
    • pinch of salt
    • 2 barramundi fish filets
    • 1/4 teaspoon salt
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon paprika
    • 1/4 teaspoon ground coriander
    • 1/4 cup fresh parsley leaves, chopped
    • 6 good quality corn tortillas
    Directions
    In a medium bowl, combine the coleslaw, yogurt, chili sauce, lime juice, and pinch of salt. Set aside.
    Prepare an indoor or outdoor grill for high heat.
    In a small bowl, combine the 1/4 teaspoon of salt, garlic powder, paprika, and coriander. Pat the fish dry and rub both sides with the spice mixture. Thoroughly coat the grill grates with nonstick spray or oil. Place fish on the grill and cook for 2-3 minutes per side, depending how thick each filet is, until the fish is cooked and the flesh flakes with a fork.
    About a minute before the fish is done, place tortillas on the grill to lightly toast (keep an eye on them so they don’t burn!)
    Assemble the tacos by dividing the fish and slaw among the tortillas. Sprinkle some parsley on top of each and an extra spritz of lime. Serve immediately.

    SALAD DRESSINGS

    Hummus Dressing

    2 heaping tablespoons hummus
    2 tablespoons balsamic vinegar
    1/2 teaspoon sugar-free mustard
    Blend, whisk or shake all ingredients together. Portion is 2-4 tablespoons.


    French Dressing
    1/4 cup apple cider vinegar
    2 packets stevia
    1/2 cup sugar-free ketchup
    2/3 cup extra-virgin olive oil
    4 teaspoon paprika
    2 teaspoon dry mustard
    1/2 teaspoon celery seed
    Blend together and enjoy!


    Raspberry Vinaigrette
    1 shallot, finely minced
    1 tablespoons sugar-free Dijon mustard
    2 tablespoons apple-cider vinegar vinegar
    1/2 pint raspberries (or about 3/4 cup frozen raspberries)
    1/2 teaspoon orange zest
    1 packet or 1/4 teaspoon stevia
    Blend all ingredients. Or skip the blender and mash the raspberries very well. Then pour all ingredients into a glass jar, cover and shake until combined. Portion is 2-4 tablespoons.

    I'm on carnivore right now. A few friends on keto asked what the difference was. I said "carnivore is keto without the little sugar veggies and carbs they get. So keto for ppl who aren't bitches" lol
