    I am a BBQ junkie myself .I been smoking meat since I was 19 and I am 50 and I'm still learning .It's alot harder if you do it right.Id really like to try some BBQ from Pit Master Rodney Scott in the Carolinas .

    The wood is just as important as the food .I like my wood to burn real clean .You can barely see any smoke coming out of my stack.Wood is to wet you get that white puffy smoke which means your fire is not hot enough and it's just smoldering and producing white dirty smoke and that's what is getting in your meat.A hot fire with good airflow to your smoker and you will get that thin blue smoke to invisible is what you want.Once you get good with your fire and controlling the temp by just adding a split to the firebox bout every hour then you ready.

    see that advise folks?suck it up coz thats from a guy whos been smokin meat for thirty years!

    I follow what you just said bamma when i cook on a camp fire.
    that dirty white smoke is coz the woods wet and the heat is drying it out.sound for a fire but not for cooking.
    i like to cook on embers.ill boil water over a fire and even char my meat.but once the meats chard it goes in a pot,and i cook it slow on the embers.

    Do you prefair any certain types of wood mate?
    i just use what evers around.
    think ive cooked with most wood.oak.chestnut.berch exc...

    I like Post Oak the best but I have to get that from Texas but it's my favorite and I like fruit woods .I also love white oak ,pecan and hickory.Post Oak is my favorite it doesn't grow where I live so it has to come from Texas

    fruit wood is good now you mention.
    i dont no what post oak is tbh.im pretty rubbish at identfing trees.but i cook over birch and silver birch quite a lot.and chestnut,even though i try not to use the stuff.it spits at ya!got holes all over me cloths of burning chestnut.

    LOL.ive must have gone insane,...here i am rambilng on about wood!

    IMO I believe Texas is where it's at for BBQ.Lots of good BBQ in Texas .

    I wish that I had the time to make my own bbq. It's harder than it looks to do right. I think rodney Scott has a place in Birmingham. You need to check out Memphis in may bbq convention. All the top teams be there. Didn't have it this year but hopefully next year.

    For brisket and sausage Texas is great. Chicago is slept on for bbq but a lot of the southern guys came from Chicago.

    I know what you mean ,my window of opportunity is Saturday after 12 and Sunday .I work minimum 50 hrs a week and good BBQ takes time .Plus have to spend time with dogs but usually once I get my smoker right I get some free time.

    Dreamland's in Alabama is good stuff .Dreamland's BBQ sauce is my favorite .I could Sop that shit up with light bread it's so good .
