What's Cookin?

    Right on with Texans and brisket. The best brisket around here comes from guys from Texas hands down. I am a bbq snob as my wife calls me. I hit certain places for depending on what I'm in the mood for. Don't want to make the trek to Nashville on the weekend and all the joints around me suck so I have been doing my own for about three years. I try to smoke something every weekend rain or shine. It is a labor of love. The more you do it the higher your expectations get. I am always overly critical of what I make. Everybody tells me how good it is and I am always stuck on what I could have done to make it better.

    As for wood it depends on what I'm smoking. Any cut of beef it is white oak all day. Hickory tends to overpower the beef taste. Don't have access to post oak, but I would love to try it. I love hickory for pork. Chicken is on hold for now because I can't get it nowhere close to right and I just end up pissed off about something that was supposed to be fun.

    I was in the same boat , everyone always loved my food and complimented me and it just drove me to dig deeper and do better .I try to make it better every time I fire up the smoker.I think your choice of wood just enhances your flavor profile but it shouldn't be all you taste.Um not real big on rubs .I like salt and pepper and I will sprinkle some rub and I mean sprinkle .I don't pat it down and let it sit for a while .Salt and pepper and light sprinkle of rub and it's in the smoker .I think the the quality of meat will speak for itself and I just want to slightly enhance what's already there

    I also believe if you get to heavy on rubs your brain and taste forget what the meat suppose to taste like so your always chasing rubs.Good quality meats only need to be slightly enhanced .I use to chase rubs .

    I am rambling but I also recommend stay away from rubs with any type of sugar.It will create a hard surface and not allow your good smoke to penetrate .Rubs is great but learn what your cut of meat should taste like and sprinkle your non sugar rub of choice.You can not and I repeat can not get enough good smoke into your meat but practice at getting as much good smoke in your meat as you can.You can get plenty of dirty smoke in your meat in a short period of time.It will be over smoked

    Haven't actually made breakfast in a little while. Daughter wanted to dine in this morning. Made French toast and hashbrowns with Blueberry & Chocolate Chip muffins. Washed it down with a carnation instant breakfast. Full AF.

    And if your offended by my choice in syrup Go fook ya self. It's the best. Lol.

    Dinner tonight was Shrimp and Crab scampy over angel hair pasta. Paired with a fabulous red berry juice. I believe it was a 2020. Lmao.... tart yet sweet. :))

    takes patience to cook good food.
    i got the patience and im a good, even great cook....but could i fuck work in a kitchen as a chef!.
    my head would boil.lol.

    I try keep it simple and real basic.
    some of these dishes you come up with i just dont no were you get em.they look super awesome man.

  12. The usa must hold the record for the best bbq world wide...did America create bbq?

    If i ever went to America on a holiday the first food i would try would be some sort of bbq.
    i do eat bbq in the summer but its nothing like how you guys and girls in the usa do it.
    best bbq i eat is chard(burnt)over a camp fire lol.

    Lmfao mostly making up for lost time. Been so long I haven't had numbers on the yard or shit I couldn't get away from. Got about two more years till I get pulled back in and locked down by these damn dogs again.
