Ya slim I dated a Filipino girl whose family did that. They had a cinder block contraption with what looked like a iron grate dug into the ground with a cover then dirt on top of the cover. Whole hog is what they did. Took all day but it was incredible.

I seen it prepared and had gumbo many times on the bayous in the Louisiana , the Chief stressed the “rue” or base everytime he prepared it. Seemed a bit time consuming, but worth it.

All this BBQ talk made me want some. I'm sure it's garbage up here compared to the southern states but since I've never had it in another state this place aint half bad.

I said the same. I never would have thought a sausage could be boiled. We just never had them when I was coming along in rural NC. Our gatherings were around pigs and chicken on the grill and fish fries over an open fire.

We did a lot of brisket back then because brisket was a cheap cut of meat back then. Then all of a sudden it is primo with all the cooking shows and smoking shows, the popularity skyrocketed. Now around here it is hard to find and when it is carried the price is as high as camel cock.

But then I went to my first low country boil in Charleston. The sausage out of that pot was absolutely killer. I could eat a bucket of the sausage alone.

Potatoes, corn, sausage, and shrimp, boiling water and some Old Bay type seasoning and it does not really get much better.

Some cabbage ,sausage , hamburger meat ,rotel tomatoes is good. The sausage I use which is Conecuh brand actually seasons everything but salt to taste..Just boil it up.I had a couple folks that hate cabbage try it and wound up going back for 3rds lol.i like with Cornbread.

It's certain type of peanut grown in the Southern United States and the way we cook them is by boiling and add salt and lots of seasoning. After a while the shell softens and starts to take on the juice from the boil.A hot bowl of spicy boiled peanuts with some beers is one of my favorites. You can't just boil any peanuts it's a certain type grown in the south
