About a medium heat ,if you go to high you will burn your bread before the cheese gets good and melty.

One of my favorite rainy day meals is a grilled cheese ,tomato soup and saltine crackers.

There are quite a few beers imported here with living yeast in the bottle. Refreshing bottle yeast is the best way for homebrewers to duplicate great European ales like Belgian Trappist ale. I haven't yet tried re-culturing yeast, but I shall certainly do it if I want to brew a classic beer style. Southern Germans like their Weizenbier with living yeast in it. The yeast is healthy to consume because it contains a lot of vitamin B.

"He was a wide man who invented beer"..don't no who said that lol.but I like the saying...and thanks for setting me straight about the grilled cheese lol.I'll try it that way when I've got a mo................and @ The Keep Book,,your right!the live yeast is good for you.as you say it's a source of vitamin B..and it's good for digestion to..plus,,it makes the beer taste a lot nicer.and stops it going flat....and is the German beer you speak of(weizenbier).a wheat beer???.

Bingo. Weizenbier is brewed with a high percentage of wheat malt, as is Berliner Weissbier (white beer), a semi-opaque, low-alcohol ale good for sweaty summers like this one. I haven't done a wheat beer yet but shall experiment with wheat malt in future.

  8. I'm not that fussed on a wheat beer..or larger..love a Peroni(Italian lager, very delicate taste)with anything Italian.it's brill.could not just drink it without Italian food tho........ha,ha,you'll like this,I got :caramelized red onion sausages roasting in the oven.but the fat of them is dripping into a trey of brown sliced onion with a oxo.salt,pepper...and yes!.you guessed it my man.Brown ale!.this ales brewed with fuggles and goldings hops.and as it cooks the smell of it is amazing..can't wait to eat it...I'll serve it with strong Welsh Cheddar mash...and the ale just mentiond....add corn flour to the ale and onion mix to thicken for a major gravy...gorgeous!!!....lol..

Fuggles and Goldings are what I use in all of my UK and Irish beers. I brew a Wee Heavy inspired by the band Simple Minds and it has only Kent Goldings hops, and peat-smoked whisky malt. I haven't had a Welsh cheese since the mid-90s. It was a lot easier to hunt good imported beer and cheese--and mushrooms--when I lived in San Fran because it is a considerably smaller city than Hell Lay. I used to buy McEwan's by the case. I dunno what it is about brown ale, but it may well be the most versatile of meat-cooking beers. I am with YellowJohnJocko re the caramelized onions. =P~=P~=P~

  12. Sounds good the beer inspired by simple minds...McEwens:Scottish beer...was it the Export one you had??.(normally in a red can).there's another one by them what's very dark colord.it's very strong over 7%.it's called Champion..it tastes a bit to strong for me..it taste like brandy or raisens..but goes well with venison......
and your right.Brown Ale is very versatile to cook with...lately I've been getting a double IPA.of Boss Brewery..it's only available in 330ml cans.it's very strong.7.4%...it's not really a IPA watsoever..but it's fucking gorgeous.I can just drink it with strong cheddar on brown bread, with some red grapes...makes a great dinner or lunch.lol....you should be able to import it..I can't remember what hops are in it.but it says on the can it's double everthing..I'll have a look later on and tell you want hops are in it..it's amazing with any strong cheese..but it says on the can it goes well with figgy nutty deserts..I think it will to...

  13. Double bittering hops,,double yeast,,double malt........it's nothing like a IPA..it's more like a strong brown ale....Boss Boss.Double IPA.....awesome ale!!
I say it's nothing like a IPA.because real IPAs normally have Cascade and Chinook hops,,and the taste is pretty unique...this Boss Boss Double IPA tastes totally different from a IPA.lol.

The McEwan's Scotch Ale sold here is a stronger version of the Champion. This is the label they used for the American export up till a few years ago.

But no!..I ain't ever had that McEwans before..dying to sample some ...I'll be on the look out for it.is it my eye sight or dose it say it's 8% on the bottle???...the Champion is over 7%..with a very raiseny taste and it's as dark as stout..the export one is 4.4%.that's more like a brown ale......
Oh yeah I forgot to say.I like the American IPAs ...we get one over here brewed by Marstons.it's called Shipyard American IPA..goes great with chicken in this hot heat.very bold citresy taste to it.also goes great with a big juicy burger...
