Hanging out in Texas for the weekend so had to get it cracking with some bbq.

 

Pecan Pie looks good.

 

That Briskett don't have a real good smoke ring but that doesn't mean it wasn't spiced enough to carry a great flavor .Cabbage look good at least look like cabbage and it's hard to fuck up sausage and BBQ beans but cane be done BB.

 

That's only thing shitty bout BBQ Joints alot of them cut to much of the smoke ring out to get the bark which is best part if if was kept spritzed and moist through out the cook.

 

Got to let the bark set before you spritz though and it's a fine line right there
.

 

Most people don't have a clue how to set the bark and if you spritz before the bark sets , the bark never really set right. Set it and then spritz accordingly depending on your temp.

 

One thing I can say is you tell these Texans how to make their brisket and you probably get cust out or shot lmfao

 

I know how they do it BB . I got lot of family out there lol.

 

Made me hungry for Brisket. Got lunch with my buisness partner at Federal Smokehouse. Some smoked Brisket and smoked pulled pork with potato salad and coleslaw. Probably the best you'll find in the 814.



Drove to the reservation and grabbed some goodies.

 

Tater Salad and Slaw can't everybody do. Most think they can though. I love both dishes.

 

I make a brisket sandwich with Cole slaw and my sauce on top and it's pretty good AGK

 

Daughter wanted tuna noodle casserole tonight so tuna noodle casserole it was.

 

Late night surf n turf. NY strip topped with sautéed blue and pink oyster mushrooms, oil & garlic pan fried shrimp, also with sautéed blue and pink oyster mushrooms with corn on the cob.

I grew the mushrooms and shucked the corn personally. I'm hands on like that lol.



Some goodies for the weekend.

 

Slovacek's in west Texas. It's pretty renowned for there sausage and kolaches. Some really great bbq.

 

God damn Cajuns can't bbq for shit. However they sure can fry there ass off.

 

BBQ Rotisserie Chicken with Lions Mane Crabcakes and French cut green beans.
Was not bad. Lol.
