    In Rio atm. The food is amazing, couldn’t resist a couple pics. Wagyu cooked on a hot stone. Med style Octopus. Had some amazing chicken gizzards as well

    20230127_175010.jpg cooked birthday dinner for my wife, ribeye on indirect heat, then seared and brushed with a garlic, thyme, rosemary butter. Fresh broccoli and sweet potatoes. Steaks came out perfect. That was my first time trying the indirect heat, I usually toss them right on the open flame and get a nice char, but am pleased with this.

    I call it a reverse sear and it's a great way to do steak . I spoke mine on around 215 for a while and then sear . Works well on chops to.
